Cool Oyster Salad
Serves four
 
This appetizer requires 1 cup of fresh, steamed Oyster mushrooms per serving.
 
To prepare mushrooms
Steam mushrooms with salted water about 5 minutes (or until cooked), rinse in cold water and chill.
  
Ginger sauce
Combine:
1/4 cup dry sherry
1/4 cup V-8 vegetable juice
1/4 cup soy sauce
1/4 cup vegetable oil
2 tsp. sugar
1 clove grated garlic
1/8 cup grated ginger root
1/2 onion diced
2 tbsp. chili oil
2 tbsp. sweet vinegar (apple cider vinegar)
 
 
Arrange chilled Oyster mushrooms on a cold plate, cover with ginger sauce, garnish with sprig of fresh cilantro and serve immediately. Note: Fresh, firm Oyster mushrooms (not dried) are required for success.
