TIP: A Great way to store morels in the refrigerator is to pile them in a glass bowl and cover them with a heavy, damp cloth--organic cotton canvas is perfect. Wet the canvas and wring it out daily to keep morels fresh for up to a week.
We don’t often suggest soaking mushrooms. But soaking morels in lightly salted water before fixing a tempura batter for deep-frying will make the flavor of the morels really pop--especially when swabbed in a dipping sauce of wasabi cream and a balsamic-port reduction. more sizzle.
